Zesty Summer Sausage Pasta Salad

 
 

Ingredients

  • 1 (12oz) Klement's Original Summer Sausage, julienned
  • 2 cups tricolor spiral pasta, cooked
  • 1 cup provolone cheese, cubed
  • 1 red onion, thinly sliced
  • 1 small zucchini, halved and thinly sliced
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1/4 cup minced fresh parsley
  • 1/4 cup grated parmesan cheese
  • 1/2 cup olive or canola oil
  • 1/4 cup cider vinegar or red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp ground mustard
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1 large tomato, cut into wedges
  • Dash of finely ground black pepper

Steps

  1. Cook pasta according to package instructions; rinse in cold water and drain. In a large bowl add the sausage, provolone cheese, onion, zucchini, peppers, parsley, and cheese.
  2. In a jar with a lid, add the oil, vinegar, garlic, mustard, basil, oregano, salt and pepper; shake well.
  3. Pour over the salad and toss to coat.
  4. Cover and chill for 8 hours or overnight. Toss before serving and garnish with tomatoes.
