Zesty Summer Sausage Pasta Salad
Ingredients
- 1 (12oz) Klement's Original Summer Sausage, julienned
- 2 cups tricolor spiral pasta, cooked
- 1 cup provolone cheese, cubed
- 1 red onion, thinly sliced
- 1 small zucchini, halved and thinly sliced
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet red pepper
- 1/4 cup minced fresh parsley
- 1/4 cup grated parmesan cheese
- 1/2 cup olive or canola oil
- 1/4 cup cider vinegar or red wine vinegar
- 1 garlic clove, minced
- 1 tsp ground mustard
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1 large tomato, cut into wedges
- Dash of finely ground black pepper
Steps
- Cook pasta according to package instructions; rinse in cold water and drain. In a large bowl add the sausage, provolone cheese, onion, zucchini, peppers, parsley, and cheese.
- In a jar with a lid, add the oil, vinegar, garlic, mustard, basil, oregano, salt and pepper; shake well.
- Pour over the salad and toss to coat.
- Cover and chill for 8 hours or overnight. Toss before serving and garnish with tomatoes.
