Summer Sausage Spinach Antipasto Salad

 
 

Ingredients

  • 1 (12oz) pkg of Klement's Garlic Summer Sausage
  • 4 cups of Fresh Spinach
  • 1/2 cup cooked Orzo Pasta
  • 1 cup cherry tomatoes sliced in half
  • 1/4 cup red onion
  • 1/2 cup sliced black olives
  • 1/4 cup sliced peperoncino peppers (if you like a little spice)
  • 1/4 cup grated Parmesan cheese
  • 1 Tsp Oregano
  • 1/2 Tsp pepper
  • 1/4 cup Italian dressing of your choice

Steps

  1. Slice summer sausage into circle pieces - then quarter those pieces
  2. Cook orzo pasta al dente - strain water out and set aside to cool
  3. Place fresh spinach into a large bowl and add onion, tomato, black olive, cheese, orzo pasta and peperoncino peppers
  4. Add Italian dressing and toss until well mixed
  5. Sprinkle oregano & pepper on top and mix a few times to fold spices in
  6. Serve and enjoy!
