Summer Sausage Spinach Antipasto Salad

Ingredients
- 1 (12oz) pkg of Klement's Garlic Summer Sausage
- 4 cups of Fresh Spinach
- 1/2 cup cooked Orzo Pasta
- 1 cup cherry tomatoes sliced in half
- 1/4 cup red onion
- 1/2 cup sliced black olives
- 1/4 cup sliced peperoncino peppers (if you like a little spice)
- 1/4 cup grated Parmesan cheese
- 1 Tsp Oregano
- 1/2 Tsp pepper
- 1/4 cup Italian dressing of your choice
Steps
- Slice summer sausage into circle pieces - then quarter those pieces
- Cook orzo pasta al dente - strain water out and set aside to cool
- Place fresh spinach into a large bowl and add onion, tomato, black olive, cheese, orzo pasta and peperoncino peppers
- Add Italian dressing and toss until well mixed
- Sprinkle oregano & pepper on top and mix a few times to fold spices in
- Serve and enjoy!
