Jalapeno Summer Sausage Mexicali Sandwich

Ingredients
- 1 - 12oz log Klement's Jalapeno Summer Sausage
- 1 cup refried beans
- 2 large avocados
- 8 slices cheese of your preference (we used Pepper Jack)
- 4 French Rolls (6-inches long)
- 1/2 cup sour cream
- 1/2 cup fresh pico de gallo
- 1/4 cup sliced red onion
Steps
- Slice the Jalapeno Summer Sausage into 1/4 -1/2 inch slices (for 4 sandwiches you need 24 slices)
- Place sausage slices into dry pan and cook over medium heat until they get a little brown on both sides
- Heat refried beans and set aside
- Slice avocados
- Split rolls lengthwise and spread each side with refried beans
- Place 6 slices of summer sausage on bottom of roll
- Spread sour cream on top of roll over the refried beans
- Place 2 slides of cheese on top of roll
- Place sliced avocado, sliced onions and fresh pico on bottom side of roll over the summer sausage
- Put top and bottom of roll together, slice in half and ENJOY!
Tips & Tricks
- Garnish with sliced pickled jalapenos for some extra kick
