Teriyaki Snack Stick Fried Cauliflower Rice

 
 

Ingredients

  • 1 1/2 cups Klement's Teriyaki Snack Sticks (cut into 1/2 inch pieces)
  • 10oz riced cauliflower
  • 2 Tbsp vegetable oil
  • 1 cup small diced carrots
  • 1 cup small diced celery
  • 1 cup frozen green peas
  • 1/2 cup green onion, sliced
  • 1 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 eggs, beaten
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp sesame oil
  • 1/2 tsp fish sauce
  • 1/2 tsp chili flake
  • Green onion (as needed)
  • Black sesame seeds-toasted (as needed)

Steps

  1. Heat the 2 Tbsp of vegetable oil in a large skillet over medium-high heat and add in the cut teriyaki snack sticks. Let cook for 2-3 minutes until lightly browned.
  2. Add in the carrots, celery, green peas, garlic, ginger, salt, pepper and green onion. Cook for 2-3 minutes, stirring occasionally.
  3. Add in the cauliflower rice and let cook for 3-5 minutes, until any excess liquid is evaporated.
  4. In a small bowl, whisk the rice vinegar, sesame oil, fish sauce, and pepper flakes together and then pour into skillet.
  5. Cook until all liquid is evaporated and then make a well in the middle of the pan. Pour the beaten eggs into the well and scramble them. Once scrambled, stir into the rest of the mixture.
  6. Place in a serving bowl and garnish the top with green onion and toasted sesame seeds.
