Teriyaki Snack Stick Fried Cauliflower Rice

Ingredients
- 1 1/2 cups Klement's Teriyaki Snack Sticks (cut into 1/2 inch pieces)
- 10oz riced cauliflower
- 2 Tbsp vegetable oil
- 1 cup small diced carrots
- 1 cup small diced celery
- 1 cup frozen green peas
- 1/2 cup green onion, sliced
- 1 tsp minced garlic
- 1/2 tsp minced ginger
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 eggs, beaten
- 1 Tbsp rice wine vinegar
- 1 Tbsp sesame oil
- 1/2 tsp fish sauce
- 1/2 tsp chili flake
- Green onion (as needed)
- Black sesame seeds-toasted (as needed)
Steps
- Heat the 2 Tbsp of vegetable oil in a large skillet over medium-high heat and add in the cut teriyaki snack sticks. Let cook for 2-3 minutes until lightly browned.
- Add in the carrots, celery, green peas, garlic, ginger, salt, pepper and green onion. Cook for 2-3 minutes, stirring occasionally.
- Add in the cauliflower rice and let cook for 3-5 minutes, until any excess liquid is evaporated.
- In a small bowl, whisk the rice vinegar, sesame oil, fish sauce, and pepper flakes together and then pour into skillet.
- Cook until all liquid is evaporated and then make a well in the middle of the pan. Pour the beaten eggs into the well and scramble them. Once scrambled, stir into the rest of the mixture.
- Place in a serving bowl and garnish the top with green onion and toasted sesame seeds.
