SAUSAGE & TORTELLINI FLORENTINE SOUP
Ingredients
- 1 (14oz) Package of Klement's Smoked Sausage Loop
- 2 tsp. of Minced Garlic
- 1 Tbsp Butter
- (48oz) Chicken Broth
- (20oz) Frozen Tortellini
- 1 (10oz) Package of Frozen Chopped Spinach
- 2 (14.5oz) Cans Diced Tomatoes
- Finely Shredded Parmesan Cheese
Steps
- Cut smoked sausage loop into quarter inch slices. Pan fry both sides. Set aside.
- In a large saucepan over medium-high heat, melt butter and add minced garlic. Cook for about 2 minutes. Add chicken broth and frozen tortellini.
- Heat to a boil; reduce heat and simmer for about 10 minutes.
- Add cooked sausage, frozen spinach and tomatoes including the juice; simmer 5 minutes longer or until spinach is heated through.
- Sprinkle each serving with Parmesan cheese.
