SAUSAGE & QUINOA

Ingredients
- 1 (14 oz) package Klement's Cooked and Smoked Dinner Links any variety
- 1 (8 oz) package quinoa
- 1 Tbsp Olive oil
- 1/8 tsp crushed red pepper
- 5 cloves garlic, thinly sliced
- 6 oz fresh spinach
- 1 oz Parmesan cheese, grated
Steps
- Cook quinoa according to directions.
- Cook your chosen sausage according to the directions. If links, coin cut them once cooked.
- Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat.
- Add the cooked sausage and crushed red pepper.
- Add garlic; cook 30 seconds, stirring constantly.
- Add spinach; cook 30 seconds or until spinach begins to wilt, tossing constantly.
- Stir in quinoa; cook 1 minute or until heated.
- Sprinkle with parmesan cheese.
