Polish Sausage, Feta Cheese & Spinach Calzone

 
 

Ingredients

  • 1/2lb Klement's Fresh Polish Sausage - removed from casing
  • 3 cups fresh baby spinach - cooked & chopped
  • 1 (13.8oz) package of Pillsbury Refrigerated Classic Pizza Crust Canned Dough
  • 6oz shredded part-skim mozzarella
  • 4oz feta cheese crumbles
  • 1/2oz fresh torn basil leaves
  • 1/4 tsp cracked black pepper
  • 2 Tbsp olive oil
  • 1/4 tsp kosher salt
  • Pizza sauce (as needed for dipping)

Steps

  1. Preheat the oven to 400 degrees F. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes then remove the sausage from the pan.
  2. Add spinach and cook in sausage fat and stir until wilted. Remove from heat. Drain and pat dry between paper towels to remove excess moisture.
  3. On a lightly floured surface, unroll and pat dough into a 15in x 11in rectangle. Cut into four rectangles.
  4. Sprinkle mozzarella cheese on half of each rectangle to within one inch of the edges.
  5. Using a small bowl, mix feta cheese, spinach, basil, black pepper, and sausage into a mixture; spoon over mozzarella cheese.
  6. Fold dough over filling then press edges with a fork to seal. Place on a parchment-lined baking sheet.
  7. Brush tops with olive oil and finish with kosher salt and cracked black pepper.
  8. Bake until golden brown, 10-15 minutes. If desired, serve with pizza sauce for dipping.
