Polish Sausage, Feta Cheese & Spinach Calzone

Ingredients
- 1/2lb Klement's Fresh Polish Sausage - removed from casing
- 3 cups fresh baby spinach - cooked & chopped
- 1 (13.8oz) package of Pillsbury Refrigerated Classic Pizza Crust Canned Dough
- 6oz shredded part-skim mozzarella
- 4oz feta cheese crumbles
- 1/2oz fresh torn basil leaves
- 1/4 tsp cracked black pepper
- 2 Tbsp olive oil
- 1/4 tsp kosher salt
- Pizza sauce (as needed for dipping)
Steps
- Preheat the oven to 400 degrees F. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes then remove the sausage from the pan.
- Add spinach and cook in sausage fat and stir until wilted. Remove from heat. Drain and pat dry between paper towels to remove excess moisture.
- On a lightly floured surface, unroll and pat dough into a 15in x 11in rectangle. Cut into four rectangles.
- Sprinkle mozzarella cheese on half of each rectangle to within one inch of the edges.
- Using a small bowl, mix feta cheese, spinach, basil, black pepper, and sausage into a mixture; spoon over mozzarella cheese.
- Fold dough over filling then press edges with a fork to seal. Place on a parchment-lined baking sheet.
- Brush tops with olive oil and finish with kosher salt and cracked black pepper.
- Bake until golden brown, 10-15 minutes. If desired, serve with pizza sauce for dipping.
