POLISH SAUSAGE & EGG SWEET POTATO HASH

 
 

Ingredients

  • 1 (1.25lb) Package of Klement's Fresh Polish Sausage, cooked and coin cut
  • 2 Tbsp olive oil
  • 1 Medium onion, chopped
  • 1 Green bell pepper, chopped
  • 2 Cloves garlic, minced
  • 2 Medium sweet potatoes, peeled and chopped
  • 1/4 Tsp rosemary
  • 4 Eggs
  • Salt and pepper, to taste

Steps

  1. Preheat oven to 425 degrees F.
  2. Cook the Polish Sausage according to the directions and coin cut the links. Set aside.
  3. In a cast iron skillet over medium heat, add olive oil. Sauté onions and bell pepper until tender. Add garlic and stir about one minute. Place mixture in a bowl or plate to the side.
  4. In the same skillet, add chopped sweet potatoes and cook, stirring occasionally, until tender (about 10 minutes).
  5. Add back in the sausage and onion/pepper mixture back into the cast iron skillet. Stir in rosemary and salt and pepper to taste.
  6. Crack four eggs and whisk together. Pour over the mixture. Place skillet in oven and cook for about 10-15 minutes until eggs are set.
  7. Remove from oven and let stand about 2 minutes. Serve and enjoy!
