POLISH SAUSAGE & EGG SWEET POTATO HASH

Ingredients
- 1 (1.25lb) Package of Klement's Fresh Polish Sausage, cooked and coin cut
- 2 Tbsp olive oil
- 1 Medium onion, chopped
- 1 Green bell pepper, chopped
- 2 Cloves garlic, minced
- 2 Medium sweet potatoes, peeled and chopped
- 1/4 Tsp rosemary
- 4 Eggs
- Salt and pepper, to taste
Steps
- Preheat oven to 425 degrees F.
- Cook the Polish Sausage according to the directions and coin cut the links. Set aside.
- In a cast iron skillet over medium heat, add olive oil. Sauté onions and bell pepper until tender. Add garlic and stir about one minute. Place mixture in a bowl or plate to the side.
- In the same skillet, add chopped sweet potatoes and cook, stirring occasionally, until tender (about 10 minutes).
- Add back in the sausage and onion/pepper mixture back into the cast iron skillet. Stir in rosemary and salt and pepper to taste.
- Crack four eggs and whisk together. Pour over the mixture. Place skillet in oven and cook for about 10-15 minutes until eggs are set.
- Remove from oven and let stand about 2 minutes. Serve and enjoy!
