GRILLED SUMMER VEGGIES & SAUSAGE
Ingredients
- 1 (14oz) Package of Klement’s Italian Sausage
- 1 Medium onion, cut into wedges
- 1 Cup of mushrooms, diced
- 1 Medium zucchini, cut into 1" slices
- 1 Medium red pepper, ribs and seeds removed, thinly sliced
- 1 Medium yellow summer squash, cut into 1" slices
- 1/4 Cup olive oil
- 1 Tbsp dried oregano
- 1 Tbsp dried parsley flakes
- 1 Tbsp garlic salt
- 1 Tbsp paprika
Steps
- In a large bowl, combine sausage, onion, mushrooms, zucchini, red pepper, and yellow summer squash.
- Combine oil, oregano, parsley, garlic salt and paprika in a smaller bowl.
- Pour smaller bowl into sausage mixture; toss and coat.
- Divide mixture between two pieces of heavy-duty foil. Fold foil around sausage mixture and seal edges tightly.
- Grill, covered, over medium heat for 25-30 minutes, or until sausage is no longer pink. Open foil carefully to allow steam to escape.
