GRILLED SUMMER VEGGIES & SAUSAGE

 
 

Ingredients

  • 1 (14oz) Package of Klement’s Italian Sausage
  • 1 Medium onion, cut into wedges
  • 1 Cup of mushrooms, diced
  • 1 Medium zucchini, cut into 1" slices
  • 1 Medium red pepper, ribs and seeds removed, thinly sliced
  • 1 Medium yellow summer squash, cut into 1" slices
  • 1/4 Cup olive oil
  • 1 Tbsp dried oregano
  • 1 Tbsp dried parsley flakes
  • 1 Tbsp garlic salt
  • 1 Tbsp paprika

Steps

  1. In a large bowl, combine sausage, onion, mushrooms, zucchini, red pepper, and yellow summer squash.
  2. Combine oil, oregano, parsley, garlic salt and paprika in a smaller bowl.
  3. Pour smaller bowl into sausage mixture; toss and coat.
  4. Divide mixture between two pieces of heavy-duty foil. Fold foil around sausage mixture and seal edges tightly.
  5. Grill, covered, over medium heat for 25-30 minutes, or until sausage is no longer pink. Open foil carefully to allow steam to escape.
