BANGO BITES

Ingredients
- 1 (14oz) Package of Klement's Andouille
- 1 (8oz) Package of elbow macaroni
- 2 Tbsp butter
- 2 Tbsp flour
- 1 1/2 Cup milk
- 1 1/4 Cup shredded Italian cheese blend
- 1 1/4 Cup shredded sharp cheddar cheese
- (2oz) Cream cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Egg, beaten
Steps
- Preheat oven to 400 degrees F.
- Spray mini muffin tins with cooking spray.
- Cook pasta according to package directions, drain, and set aside.
- Coin cut the Andouille and then chop each "coin" into fourths.
- In a medium size pan, combine butter and flour over medium heat. Whisk until mixture is smooth. Slowly add the milk and bring to a simmer.
- Add 1 cup of each of the cheeses, cream cheese, salt and pepper. Stir until smooth and creamy. Remove from heat.
- In a large bowl, carefully stir pasta, cheese sauce, sausage, and egg until evenly mixed and pasta is evenly coated.
- Spoon mixture into muffin tins and top each with a small pinch of remaining cheeses.
- Bake for 15 minutes or until golden brown.
- Allow them to cool for a few minutes before carefully removing the bites. Enjoy!
