OCTOBERFEST SOUP

 
 

Ingredients

  • 1 (14oz) Package of Klement's Smoked Sausage Loop
  • 2 tsp. of minced garlic
  • 1 Tbsp butter
  • (48oz) Chicken broth
  • (20oz) Frozen tortellini
  • 1 (10oz) Package of frozen chopped spinach
  • 2 (14.5oz) Cans diced tomatoes
  • Finely shredded parmesan cheese

Steps

  1. Cut Smoked Sausage loop into quarter inch slices. Pan fry both sides. Set aside.
  2. In a large saucepan over medium-high heat, melt butter and add minced garlic. Cook for about 2 minutes. Add chicken broth and frozen tortellini.
  3. Heat to a boil; reduce heat and simmer for about 10 minutes.
  4. Add cooked sausage, frozen spinach and tomatoes including the juice; simmer 5 minutes longer or until spinach is heated through.
  5. Sprinkle each serving with Parmesan cheese.
