BANGO BITES

 
 

Ingredients

  • 1 (14oz) Package of Klement's Andouille
  • 1 (8oz) Package of elbow macaroni
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 1/2 Cup milk
  • 1 1/4 Cup shredded Italian cheese blend
  • 1 1/4 Cup shredded sharp cheddar cheese
  • (2oz) Cream cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Egg, beaten

Steps

  1. Preheat oven to 400 degrees F.
  2. Spray mini muffin tins with cooking spray.
  3. Cook pasta according to package directions, drain, and set aside.
  4. Coin cut the Andouille and then chop each "coin" into fourths.
  5. In a medium size pan, combine butter and flour over medium heat. Whisk until mixture is smooth. Slowly add the milk and bring to a simmer.
  6. Add 1 cup of each of the cheeses, cream cheese, salt and pepper. Stir until smooth and creamy. Remove from heat.
  7. In a large bowl, carefully stir pasta, cheese sauce, sausage, and egg until evenly mixed and pasta is evenly coated.
  8. Spoon mixture into muffin tins and top each with a small pinch of remaining cheeses.
  9. Bake for 15 minutes or until golden brown.
  10. Allow them to cool for a few minutes before carefully removing the bites. Enjoy!
