GRILLED BRATWURST QUESADILLAS

 
 

Ingredients

  • 1 (14oz) Package of Klement's Traditional Bratwurst
  • 1 Tbsp. olive oil
  • 1 Medium zucchini, sliced lengthwise into 1/4-inch thick stripped slices
  • 4 Cups shredded mozzarella cheese
  • 1 Red pepper, sliced into quarters
  • 1 Green pepper, sliced into quarters
  • 1 Medium onion, sliced into 1/4-inch thick sliced rounds
  • 10 Tortillas, corn or flour
  • 1 Can of black beans
  • Sour cream
  • Salsa
  • Salt and pepper, to taste

Steps

  1. Be sure grates of grill are clean and heat grill to medium-high heat.
  2. Wash all vegetables and arrange on a baking sheet. Coat vegetables with olive oil and salt and pepper, to taste.
  3. Place vegetables and Smoked Bratwurst on the grill so that they are perpendicular with the grates. Grill vegetables on each side for 3-5 minutes and flip. Vegetables will cook at different times so keep watch. Grill Smoked Bratwurst until browned and grill marked.
  4. Remove the brats and vegetables from the grill and place on a large cutting board. Cut each of the vegetables to desired sizes of quesadillas. Slice Smoked Bratwurst using tongs into coin cut pieces. Open the can of black beans, drain, and set aside with vegetables.
  5. Heat a griddle to medium-high heat.
  6. Begin crafting your quesadillas by adding the desired amount of bratwurst, cheese, vegetables, and black beans. For best results, spray or oil your hot griddle and lay the first tortilla down, adding toppings and finishing with the second tortilla.
  7. Continue crafting quesadillas as space allows on the griddle. Cook for 3 minutes on each side and flip.
  8. Serve warm with sour cream and salsa. Enjoy!
